The extra-virgin olive oil is one of the food most at risk of counterfeiting, mainly because frauds on this kind of food are among the most rewarding.

The average cost to produce a good Italian extra-virgin oil, which is recognised as qualitatively better as compared to other international competitors, is significantly higher than in other EU and non-EU countries.

In fact, the agricultural practices that characterize this product include performing the collection in the first phase of olive ripening and a fast milling (before the natural fermentative processes begin).
